Mmm, tastes like summer!
You know that feeling you get when you bite into hot barbecue chicken right off the grill at that family BBQ every summer? Yeah, that’s the feeling you get with this recipe. Who cares if it’s winter? This barbecue baked chicken tastes delicious all year long.
Ingredients
Bone-in chicken (legs, thighs, split breast)
Olive oil
Salt
Black pepper
Garlic powder
Minced onion
Basil (or oregano)
Paprika
Crushed red pepper (optional, for a kick)
Sweet Baby Ray’s Barbecue Sauce
Note: Use as much or as little chicken as you want. Just be sure to spice generously! I suggest using bone-in, because boneless would end up dry. My favorite is the split chicken breast - it reminds me of The Patio’s bbq chicken!

Directions
1. Preheat the oven to 400°. Clean chicken thoroughly and pat dry. Place in a large pan (I suggest using an aluminum disposable pan since the barbecue sauce will definitely stick on).
2. Drizzle olive oil over your chicken and generously spice both sides with salt, black pepper, garlic powder, minced onion, basil, and paprika. Sprinkle a dash of crushed red pepper and rub all of the spices into the chicken making sure it’s fully coated.

3. Place the meaty sides down. Then, cover the pan and bake for 45 minutes. Carefully drain the fat from the pan, then flip the chicken (meaty side up) and bake for another 30 minutes while still covered.
4. Coat the chicken with two layers of Sweet Baby Ray’s Barbecue Sauce using a cooking brush. Bake for another 15 minutes, or until no longer pink.
