CHICKEN PARMIGIANA.
Crispy chicken breast topped with melted mozzarella cheese with a side of spaghetti & homemade marinara sauce. With this recipe, you will get a restaurant quality meal that you’ll devour in seconds!

INGREDIENTS.
FOR THE CHICKEN PARMIGIANA:
FOR THE HOMEMADE MARINARA:
- 4 boneless chicken breasts, 1/2 inch thick
- 2 tbsp butter
- 2 tbsp vegetable oil
- Salt
- Black pepper
- Garlic powder
- 1 egg
- Italian seasoned bread crumbs
- Homemade marinara
- Mozzarella cheese
- Dried basil
FOR THE HOMEMADE MARINARA:
- 1/2 tbsp olive oil
- 1 garlic cloves, minced
- 1 can tomato paste
- 1.5 cups water
- Salt
- Black pepper
- Garlic powder
- Crushed red pepper
- Dried basil
- 1 bay leaf (optional)
DIRECTIONS.
FOR THE CHICKEN PARMIGIANA:
FOR THE HOMEMADE MARINARA:
- Season both sides of the chicken breasts with a good amount of salt, black pepper, and garlic powder. Then, whisk one egg in a shallow dish and pour about a cup of breading in another shallow dish. Dip each chicken into the egg on both sides, then coat them well in the breadcrumbs and set aside.
- Preheat the oven to 350° and begin to melt 2 tbsp butter in a large deep pan along with the 2 tbsp vegetable oil on medium-high heat. Once heated, cook the chicken on the one side for about 5-6 minutes, or until golden, then flip for another 4-5 minutes.
- Place the chicken on an oven pan, spoon some of the marinara sauce over each one and sprinkle a generous amount of mozzarella cheese on top and then sprinkle some dried basil over the cheese. Bake for 15 minutes, then broil for 2-4 minutes, or until the cheese has a little color to it. Enjoy with a side of classic spaghetti!
FOR THE HOMEMADE MARINARA:
- In a deep saucepan, heat 1/2 tbsp olive oil on medium heat. Sauté 1 minced garlic clove until fragrant, then add the 1 can of tomato paste and the 1.5 cups water. Whisk until the tomato paste has fully combined with the water.
- Season with salt, black pepper, garlic powder, dried basil, and crushed red pepper. Toss in a bay leaf and allow it to boil on medium heat while whisking frequently for a few minutes. Turn the heat to low and cover it to simmer. Taste and adjust seasonings to your preference.
