CINNAMON ROLL COFFEE CAKE
A delicious homemade cinnamon roll coffee cake — what could possibly be better? A cake and a cinnamon roll smashed together makes this dessert untouchable! This yummy cake is packed with cinnamon and brown sugar flavor! Not to mention how moist and fluffy it is... This easy cake is to die for!

INGREDIENTS

- 3 cups all-purpose flour
- 1 cup granulated sugar
- 4 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 eggs, room temperature
- 2 tsp vanilla extract
- 1.5 cups milk
- 1/4 cup sour cream
- 1 stick unsalted butter, melted
FOR THE CINNAMON FILLING
- 1.5 sticks unsalted butter, softened
- 1 cup packed light brown sugar
- 2 tbsp all-purpose flour
- 1 tbsp cinnamon
FOR THE CINNAMON GLAZE
- 2 cups powdered sugar
- 1/4 cup + 1 tbsp milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
DIRECTIONS
- Preheat the oven to 350°. In a large bowl or bowl of a stand mixer, whisk together all the cake ingredients except for the melted butter. Whisk until combined, wiping the edges in as needed.
- Slowly add in the melted butter into the batter as you are whisking. Mix just until combined to avoid over-mixing. You want to be able to do figure eights with the batter! Spray a 9x13 pan with nonstick spray and pour the batter into the pan.
- In another bowl, mix together all the ingredients for the cinnamon filling with a spoon until creamy. You want the texture of crunchy peanut butter! Drop spoonfuls of the cinnamon filling all over the cake batter in the pan.
- Using a butter knife, start to spread the cinnamon filling by doing a swirling motion. You want the cinnamon filling to be swirled all around the top of the cake. It may sink, but that’s okay. Bake at 350° for 35 - 45 minutes, or until a toothpick runs clean.
- While the cake is baking, make the cinnamon glaze. In a small bowl, whisk together all the ingredients until smooth.
- Once the cake is done baking, make some extra slits in the cake all over. Pour all the glaze over the entire cake. The glaze will begin to sink into the cake and harden on top! Give it about 15 minutes to cool down before cutting into it!
