GET CHEESY.
Normally, alfredo sauce would have parmesan cheese in it, but most people generally have mozzarella cheese on hand. I used shredded mozzarella for my alfredo and it came out wonderfully! So, you could choose to use either mozzarella or parmesan — both will work great.
INGREDIENTS.
For the alfredo sauce:
Adding chicken:
If you’d like chicken added to your alfredo pasta, simply season a few chicken breasts with the same spices as your sauce. Grill in a couple tbsp butter on medium-high heat until golden and no longer pink. Slice and serve over pasta.
- 1/2 onion, diced
- 1 tsp garlic, minced
- 1.5 cups heavy whipping cream
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp oregano
- 1/2 cup mozzarella or parmesan cheese
- 1/2 box penne, or any type of noodle
- 1 cup broccoli florets
- 1 tsp salt

DIRECTIONS.
- Begin by cooking your pasta according to the box instructions and adding in 1 tsp salt with the broccoli florets.
- In a large saucepan, melt the butter on medium-high heat. Sauté the diced onion and minced garlic until fragrant.
- Pour the heavy whipping cream into the pan and bring to a boil. Mix in the salt, black pepper, garlic powder, and oregano. Cook for a few minutes.
- Turn the heat down to low and sprinkle in the cheese. Gently whisk the cheese into the sauce as it begins to slowly melt, for about a couple minutes.
- Let the alfredo sauce simmer for another 5 minutes while you drain the pasta and broccoli. Then, toss the pasta into the saucepan and fold it into the alfredo sauce.
- To serve, garnish with grated mozzarella or parmesan cheese.
