HOMEMADE CHIPOTLE BOWL.

INGREDIENTS.
FOR THE CHICKEN:
FOR THE CILANTRO LIME RICE:
FOR THE FAJITA VEGGIES:
OTHER INGREDIENTS:
- Chicken tenders, boneless thighs, or boneless breast
- Olive oil
- Salt
- Black pepper
- Garlic powder
- Paprika
- Cayenne pepper
- Chilli powder
- Cumin
- Crushed red pepper
- 1 lime
FOR THE CILANTRO LIME RICE:
- 1 cup white, brown, or cauliflower rice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 handful cilantro, chopped
- 2 limes
FOR THE FAJITA VEGGIES:
- 2 green bell peppers, sliced & halved
- 1 large red onion, sliced
- Salt
- Black pepper
- Olive oil
OTHER INGREDIENTS:
- 1 can organic black pinto beans
- 1 can organic kernel corn
- Guacamole
- Salsa
- Sour cream
- Mozzarella cheese
- Shredded lettuce
DIRECTIONS.
FOR THE CHICKEN:

FOR THE FAJITA VEGGIES:
- In a large bowl, season the chicken tenders whole with a generous amount of salt, black pepper, garlic powder, cumin, cayenne pepper, chili powder, paprika, and crushed red pepper. Drizzle olive oil on the chicken and rub in well.
- Heat 2 tbsp olive oil on a large saucepan on medium-high heat. Cook the tenders on one side without turning them until they're seared nicely. Once they're nicely grilled, turn it on the other side to cook until it's the same color.
- When the chicken is almost cooked thoroughly, cut the chicken into tiny pieces, squeeze the lime on all of it, and cook for a couple more minutes. Then, remove.
FOR THE RICE:
- Cook your white or brown rice as normal with the amount of salt and black pepper mentioned, or to your preference.
- Once the rice is fully cooked, mix in the two limes, add the cilantro, and mix well.
- If you are making cilantro lime cauliflower rice, sauté the cauliflower rice with a little olive oil. Add a little salt and pepper, then when it's done, squeeze in the lime and mix in the cilantro! It tastes great.
FOR THE FAJITA VEGGIES:
- Heat 1 tbsp olive oil in a small sauce pan. Toss the sliced red onion and green bell peppers in the pan and season with salt and black pepper.
- Cook the veggies while mixing every couple minutes. Once they have some grill marks, pour a few drops of water in the pan and cover it to steam for a few minutes.
- Remove from heat when the veggies are soft and tender.
