PREP: 5 M | COOK: 15 M | YIELDS: 12 pancakes

INGREDIENTs

  • 1.5 cups all-purpose flour
  • 3.5 tsp baking powder
  • 1/2 tsp salt
  • 5 tbsp sugar
  • 1 1/4 cup milk
  • 1 tsp vanilla extract
  • 3 tbsp butter, melted
  • 1 egg

DIRECTIONS

  1. In a large mixing bowl, sift and combine the flour, baking powder, salt, and sugar.
  2. Making a well in the center of the dry ingredients, add the milk, melted butter, vanilla, and egg. Whisk until thick and creamy.
  3. Heat a pan on medium heat and melt 1/4 tbsp butter. Spoon a 1/4 cup of batter on the heated griddle at a time and brown on both sides. The first side will take a little longer (1-3 minutes, you’ll have to test it out on your griddle/pan). The second side usually just a minute.

NOTE: If you don’t finish all the pancakes, store them in a ziplock and refrigerate. Microwave the next morning and enjoy!
