Strawberry Cheesecake
​Puff Pastry

The perfect way to say ‘I love you’ this Valentine’s Day! This Strawberry Cheesecake Puff Pastry is not only eye-catching, it tastes absolutely delightful. From the flakiness to the fresh fruit to the homemade cream cheese frosting! Pair it with a hot cup of coffee and you’re good to go!

What you need

  • 2 Pillsbury Original Crescent Roll cans
  • 1.5 8oz packages cream cheese, room temp.
  • 1 egg, whisked for wash
  • 5 tbsp sugar
  • 2 tbsp vanilla extract
  • 2 tbsp heavy whipping cream
  • Shredded sweeted coconut
  • Chopped walnuts
  • Strawberries, sliced
  • Blueberries
  • Flour, for workspace
  • Nonstick spray

The Method

1. Preheat oven to 375°. Dust flour over a large, clean workspace. Pop open the 2 cans of Pillsbury Original Credcent Rolls. Using your hands, squeeze the dough from top to bottom to seal any crevices and to make it thinner and longer.
2. Using your thumb, press down the center of each roll to make a divot from top to bottom. This is so that the dough rises with flat edges of the heart instead of rounded ones.
3. Shape the dough into a heart and seal the edges together tightly.
4. Push the edges up to perfect the shape of the heart.
5. Brush the egg wash all over the edges. This will help achieve the beautiful golden color.
6. Sprinkle 1 tbsp sugar all over the dough.
7. Spray a large rectangle pan with nonstick spray and carefully place the dough on the pan with the sides of the heart pressed against the edge (this will help hold its shape). Be sure to fix the shape of the heart, if needed. Bake for 20 minutes at 375°, or until golden brown.

Note: While baking in the first 5-10 minutes, keep an eye on the tips of the heart in case the spread apart. If they do, simply seal the dough back together using tongs.
8. Allow the pastry to cool completely on a wire rack or on top of the stove (about 30 minutes). During this time, begin making the cream cheese frosting.

9. In a bowl, mix together the cream cheese, 2 tbsp vanilla extract, and 4 tbsp sugar with an electric hand mixer.
10. Then, mix in the 2 tbsp heavy whipping cream until you have stiff peaks. Use a rubber spatula to smooth the frosting.
11. Slice the strawberries and prepare your toppings on the side. Begin frosting the puff pastry.
12. While frosting the pastry with a butter knife, be sure to leave the edges of the pastry exposed.
13. Begin topping with your strawberries, then blueberries.
14. Finish off the center of the heart with the chopped walnuts and the coconut shreds on the very outer edge.
15. You’re all done and ready to serve! Be sure to keep this pastry wrapped and refrigerated if it’s not being eaten in one day (if possible)!
